Fructosyltransferases and Invertases: Useful Enzymes in the Food and Feed Industries

Abstract Enzymes are very popular and well-established biotechnology products with a great and growing global market. Significant advances in enzyme engineering, function-structure relationship, and biocatalyst design have fastened the availability of these products together with the establishment of efficient bioprocesses to produce them in a cost-effective manner. This review provides an updated insight into the production and application of some sets of useful enzymes in the food sector, such as fructosyltransferases and invertases. These enzymes are very popular nowadays in the production of fructo-oligosaccharides (FOS) and levan and inverted syrups. All these products have unlimited applications in dairy products and other food and soft drink-related industries. Gene isolation, recombinant production, and bioprocess establishment based on free and immobilized recombinant enzymes or immobilized whole recombinant cells will also be discussed.
