The Milk Fat Globule Membrane: Structure, Methodology for its Study, and Functionality

Abstract This chapter describes the different approaches necessary to study the complex structure of the milk fat globule membrane (MFGM). We present a summary of the advances of the last 15 years of research on the topic, and gloss over the functions of the membrane, the biological and the physicochemical ones that are relevant to health and wellness. We present a current review of the status of our understanding of the MFGM in its biological role, and the approaches taken for furthering the detailed study of its structure and behavior during processing and digestion.
