The invention discloses a humidity and temperature control process in an algal polysaccharide plant capsule production process. The humidity and temperature control process comprises a humidity and temperature control device and a PLC (programmable logic controller) control system, wherein the humidity and temperature control device comprises a first constant temperature control device, a humidity processing device and a second constant temperature control device, the humidity processing device is provided with a constant temperature air inlet gas humidity processing device and a regeneration region used for the humidity processing device, water vapor in constant temperature air inlet gas is adsorbed by moisture absorption media when passing through the humidity processing device, and constant humidity gas is obtained; high-temperature gas being 100 to 140 DEG C is introduced into the regeneration region, the water vapor is exhausted along with high-temperature gas, and the regeneration of moisture absorption media of the humidity processing device is realized. The humidity and temperature control process has the advantages that the ultra-low-humidity dry gas can be simply obtained, the ultra-low-humidity dry gas which has the dew point temperature below than 6 DEG C and cannot be realized by a cooling dehumidification mode can be continuously provided, the cost is low, and the running operation and the maintenance are simple.
