Sweet potato starch

Abstract This chapter introduces an overview of the structural and physicochemical properties of sweet potato starches. It starts by presenting an overview of sweet potato starches, followed by their physicochemical characteristics. It then explains the physicochemical properties of sweet potato starch chemically modified by retrogradation and further acetylation. By the end of the chapter, the structural and physicochemical properties of sweet potato starch physically modified by high hydrostatic pressure are presented, as well as the effects of different inorganic salts.
