espanolEl presente trabajo se enfoca en la extraccion acuosa de proteinas a partir de expeller de soja y su posterior precipitacion, asi como en el analisis de los efluentes solidos resultantes de este proceso a fines de evaluar su potencial valorizacion considerando principalmente el contenido de fibra dietaria. Para esto, se evaluaron y caracterizaron muestras de expeller provistas por PyMES de la region, que fueron sometidas al proceso de recuperacion de proteinas y fibras bajo un amplio rango de condiciones operativas. Los resultados obtenidos fueron sometidos a analisis de varianza, y permiten detectar potenciales alternativas de procesamiento para la generacion de productos de mayor valor agregado. EnglishThe present works deals with the protein aqueous extraction from extruded-expelled soybean meals, followed by the protein isoelectric precipitation. The solid effluent (i.e. residual meal) is also analyzed for evaluating its potential value-added regarding mainly its dietary fiber content. For these purposes, extruded-expelled meals provided by Argentinian small and medium companies were evaluated, characterized and subjected to protein and fiber recovery processes under a wide range of operating conditions. Results were analyzed by ANOVA method and revealed potential processing alternatives for generating value-added by-products.
