Application of esterified red starter in the production of multiple-grains type daqu in jiang-huai river drainage area

We have made series of experiments on the application of esterified red starter in multiple-grains type Daqu production in Jiang-Huai River drainage area.The results indicated that the experimental group was much better than the others in many indexs including the productivity,excellent ratio,excellent Daqu quantity and the comprehensive economic benefits etc.,besides,the proportion of caproic acid and ethyl lactate was more harmonious.The use of esterified red starter in Daqu production could improve the output and the quality of multiple-grains type Daqu in Jiang-Huai River drainage area.
