Production of chymosin and chymosin precursor with microorganism

PURPOSE: To produce a substitute for rennet necessary for the production of cheeses by using a microorganism containing a recombinant DNA. CONSTITUTION: This method for producing a chymosin or its precursor comprises transforming a microorganism with a recombinant plasmid containing a proper regulon and a specific structure gene encoding for bovine calf preprochymosin having a specific base sequence or one of various allelic or maturation forms thereof, culturing the transformant and subsequently isolating the preprochymosin or one of the various allelic or maturation forms thereof.
