The invention discloses an egg product as well as a method and a device for processing the egg product, and relates to the technical field of deep processing of the egg product. By using the processing method, the egg product can be conveniently and rapidly prepared and nutrient components of the egg product can be effectively increased and maintained. The method comprises the steps of: preparing egg product processing raw materials, stirring the processing raw materials into dough, forming the stirred dough in granular forms, and implementing microwave processing treatment on the formed granular material to obtain the granular egg product, wherein the processing raw materials includes egg powder or egg liquid, starch, edible oil, seasonings and water, wherein the dry material of the egg powder or egg liquid accounts for 20-50% of the total weight of the processing raw materials, the starch accounts for 10-30% of the total weight of the processing raw materials, the edible oil accounts for 2% of the total weight of the processing raw materials, the seasonings account for 20% of the total weight of the processing raw materials and the water accounts for 18% of the total weight of the processing raw materials.
