MONITORING THE COURSE OF ENZYMATIC DEGRADATION OF PECTIC SUBSTANCES BY AUTOMATED FAST ION CHROMATOGRAPHY (FIC)

It was possible to follow the degradation process of the pectic substances, using commercial pectic enzyme preparations. The results show that oligogalacturonic acids with DP=2-6 were degraded to the monomer using Pectinex. The existence of an exo-oligogalacturonase in the commercial pectic enzyme preparation used could therefore be confirmed. During the degradation of Na-polygalacturonate, oligomers with DP=8-9 predominated in the early phase of treatment.
