Recent European Union legislation provisions establish that live bivalve molluscs harvested in sea waters must undergo a purification process when the number of Escherichia coli/100 g of pulp and intervalve liquids is >230<4600 respectively. The feasibility of common Chamelea gallina purification on a large commercial scale has been studied in an establishment which is already purifying other molluscs using sea water that has been cleaned by appropriate treatment, thus reaching validated physical and chemical characteristics. The results show that purification of Chamelea gallina could be done on a large commercial scale even in short periods of time (9 hours) and with a low mortality rate (1-2%).
