We investigated the transfer of Shigatoxin-producing Escherichia coli (STEC) from feces (gut) to carcasses during slaughter of cattle. We took fecal samples from 100 cows by using swabs just before slaughter. After enrichment we detected in screening 51 samples containing STEC. STEC were isolated from 39 samples. These strains were characterized (Stx-type, eae, EHEC-bly, serotype). Furthermore we investigated 2 spots (ca 0.01 square metre) on the carcasses by using swabs, respectively. 4 samples showed STEC in screening after enrichment. The strains were isolated from 3 samples. These strains were characterized, too. One strain showed the same characteristic as the STEC isolated from the fecal sample, respectively. So we could show that the transmission of STEC/EHEC from the feces (gut) to the surfaces of carcasses during slaughter could be possible. Food could be contaminated, too. The consumer should know that the consumption of raw or undercooked food is risky. Nevertheless our results show a good hygine during slaughter.
