Saccharomyces cerevisiae B18 as antifungal and aflatoxin binder in vitro

Determining the ability of yeast as antifungal and aflatoxin binder in vitro was performed in this study. The antifungal assay was performed using the overlay method and mycelial growth inhibition method, while binding aflatoxin activity was conducted by microtiter plate method. The results showed that antifungal activity against Aspergillus flavus FNCC 6002, A. paraciticus FNCC 6033, and Penicillium citrinum FNCC 6111 was found in S. cerevisiae B18 isolate derived from Javanese duck (Anas javanicus) colon with the highest percentage of inhibition (71.83 %). The aflatoxin binding assay showed that viable cell of S. cerevisiae B18 produced higher aflatoxin binding (71.86 %) than non-viable cell (69.52 %) during 48 h of incubation. It can be concluded that S. cerevisiae B18 had antifungal and binding aflatoxin activity in vitro.
