Effects of Different Fertilizers on Capsaicin and Related Substances in Clusterred Hot Pepper

The effects of different fertilizers on capsaicin accumulation and its competition substances and related enzymes were studied. A clusterred hot pepper variety 8024 was planted in pots in a greenhouse. The content of capsaicin and flavonoids, ignin and POD, PPO, CAT at seven different fertilizer levels was detected in clusterred pepper fruits during the growth period. The results showed that the application of bio-compound fertilizer was most conducive to hot pepper fruit capsaicin accumulation in capsicum fruit, and the capsaicin content accumulation value of hot pepper fruits picked in the crimson period was the highest. The application of bio-compound fertilizer was also the most conducive to the accumulation of flavonoids and lignin content. The results also showed that capsaicin had strong competitive relationship with flavonoids and lignin, so the way by applying different fertilizers to regulate the relationship between capsaicin with other competition substances was difficult at present. And the application of bio-compound fertilizer restrained the activity of POD and PPO to a certain extent and promoted the synthesis of capsaicin, while CAT was not a limiting factor in the synthesis of capsaicin.
