The invention discloses a preparation method of Western-style compressed duck soup ham. The preparation method comprises the steps of preparing skinned duck breast as raw material meat, injecting a herb extracting solution into the raw material meat in a saline injection way, and tumbling, die-filling and forming, stewing, cooling, demoulding and packaging, pasteurizing and storing the meat, wherein the herb extracting solution is prepared by extracting Chinese medicinal herbs through water, and adding seasoning auxiliaries and food auxiliaries; and the raw material meat accounts for 90-110 parts by weight, the Chinese medicinal herbs account for 5-7 parts by weight, the seasoning auxiliaries account for 4-6 parts by weight, and the food auxiliaries account for 4-6 parts by weight. The preparation method fuses a concept of preserving health of traditional Chinese medicine, and adds some Chinese medicinal herbs which are subject to appropriate treatment to the Western-style compressed ham prepared from the duck breast; and the prepared duck ham is unique in flavor, abundant in nutrition, fresh, tender, fat but not greasy in meat, and tidy and firm in meat section, and the duck ham carries forward traditional Chinese cooking culture and widens ways of processing duck products.
