The invention relates to a processing method of dried bamboo shoots and relates to the technical field of bamboo shoot processing. The processing method comprises the following steps: (1) shelling; (2) cooking, namely putting shelled bamboo shoot bodies into a cooking pot, adding water into the pot, adding 10-15% of salt into the water and continuously boiling for 6-10 minutes; (3) cooling and cleaning; (4) squeezing, namely layering and staggering the rinsed bamboo shoot bodies and knot tails, levelly putting in a squeezer, slowly pressurizing for 1-2h, then loosening and adding a counterweight to press till squeezed water has foams and has the slightly red color; (5) airing, namely spreading the bamboo shoot bodies on a wood plate to be solarized in a sunny day, overturning at fixed time, when the bamboo shoot bodies are solarized to 90% dry, layering, staggering and lapping end to end on the wood plate, covering by using a wood plate cover, adding the counterweight, naturally moisture-regaining and pressurizing, and then solarizing for 3-5 days till the bamboo shoot bodies are fully dried; and (6) grading, packaging and storing. The processing method provided by the invention is convenient to operate, and processed bamboo shoots are good in taste, convenient to process and store for a long time and hardly deteriorate in the processing course.
