Melanin in black-bone chickens from Taihe county of Jiangxi province and Beijing was extracted by a series of pro- cesses,such as protein-denaturation,homogenization,enzymatic degradation,defatting and deproteinization.The extract was identified to be melanin because of its electron paramagnetic resonance feature.This technique will lay a foundation for further research on the medical,value of black-bone chickens
