Study on the Slaughter Performance and Meat Quality of Bawang Black-bone Chickens

Bawang black-bone chicken was a good breed of local black-bone chickens which had been introduced into Hainan Island from some part of Sichuan Province.In this study,the slaughter performance and physicochemical properties in meat quality of Bawang black-bone chickens were measured and analysized at the age of 150 days.The results showed that there were significant difference(P0.05) between the females and the males in live weight,carcass weight,half-eviscerated weight,eviscerated weight,and the values in males was larger than the females.The dressed percentages,half-eviscerated percentage and eviscerated percentage for the males and the females were 91.32%,84.50%,69.55% and 90.21%,79.90%,66.78%,respectively.The percentage of abdominal fat in males was obviously inferior to the females(P0.05).As for the physicochemical properties of meat quality,there was no significant difference between the males and the females in such determined indexes as pH value,water content,crude protein content,water loss,meat tenderness,while choresterol content of the females was significantly higher than the males(P 0.01).Compared with Wenchang chickens,Bawang black-bone chickens had an obvious advantage in most traits and showed unique performance.It indicated that Bawang black-bone chickens had many advantages in meat quality such as full of juice,distinct flavor,well-developed muscles,good taste,rich nutrients etc.,it showed a wide market potential and a bright extension prospect.
