The content of common lipids and their individual classes in the pancreas of the quail was investigated. It was found that the content of total lipids in the pancreas decreases against the background of stress. In addition, the content of non-esterified fatty acids is significantly reduced. Quails, which, along with the nitrate load fed amaranth feed, are likely to double the level of total lipids. At the same time, the number of mono- and diacylglycerols is reduced, and the level of triacylglycerols is significantly increased. Feeding amaranth seeds to quails leads to an increase in the amount of cholesterol esters.
