The invention discloses a fruit and vegetable cleaning and sterilizing device and method. The device comprises a cleaning tank, an ultrasonic signal generator connected with the cleaning tank and transmitting ultrasonic signals into the cleaning tank, an acid water tank, an alkali water tank, a potential water generator and a control unit. A water inlet hole, a jet hole, an overflowing hole and a water outlet hole are formed in the cleaning tank. The acid water tank is communicated with the water inlet hole and the jet hole of the cleaning tank through a corresponding control valve and a corresponding pipeline. The alkali water tank is communicated with the water inlet hole and the jet hole of the cleaning tank through a corresponding control valve and a corresponding pipeline. The potential water generator is connected with the acid water tank and the alkali water tank to provide acid potential water for the acid water tank and provide alkali potential water to the alkali water tank. The control unit is connected with the ultrasonic signal generator, the potential water generator and control valves of the acid water tank and the alkali water tank through lines. By means of the device and method, ultrasonic wave, acid potential water and alkali potential water are organically combined, pesticide residue and dirt on the surfaces of fruit and vegetables can be removed, cleanness is improved, microorganisms attached to the surfaces of the fruit and the vegetables are reduced, and edible safety can be guaranteed.
