The present invention describes a method inexpensive and simple purification of fungal alpha-amylase STABLE acid wherein alpha-amylase is obtained without significant loss ENZYME ACTIVITY. Alpha-amylase PURIFICADA STABLE acid derived is substantially free of glucoamylase. METHOD FOR PRODUCING AN ALPHA-AMYLASE STABLE acid comprises the following steps: - adjusting the pH of the solution containing the enzyme to a value between 1 and 8, - heating the solution at a temperature and for a time sufficient to inactivate glucoamylase - ELIMINATION OF denatured glucoamylase. Alpha-amylase PURIFICADA ACID STABLE FOR CONVERSION Starch is used. PURIFICADA alpha-amylase is also used in an immobilized form.
