Control of yeasts and ethanol formation during non axenic fed batch fermentation of maize

Starch-rich substrates can be fermented under non-axenic conditions to valuable silage products. Yet, micro-aerophilic conditions give often rise to underisable yeast growth and ethanol formation. Since lactic acid bacteria are the only bacteria known to be able to develop in the absence of iron, complexation of the latter element was used successfully to direct such mixed fermentations towards predominant lactic acid fermentations
