Process for extracting collagen from thin cow skin

The invention relates to a process for extracting collagen from thin cow skin, belonging to the technical field of collagen extraction. The process comprises liming, deliming, pre-pickling, pickling, acid washing and skin discharge and is characterized in that organic weak acid and salt are adopted to soak the thin cow skin during pickling; and sodium bicarbonate is firstly added for neutralization and then clear water is used for soaking during acid washing. The process has the beneficial effects that not only can interfibrillar substances be dissolved out but also collagen fibers can be ensured not to be damaged, thus increasing the collagen extraction rate of the thin cow skin.
