Control bacteriológico de pasteles en el Area de Salud de Alcoi

In this work we explain the results obtained by the Microbiologic Public Health laboratory (Alcoi); about the microbiologic quality of cakes as well as other products from cake shop at health Areas 13 and 14 during 1993-1995. We are analysed 311 samples, found that 191 samples (61,4%) don't carry out some requirement of Spanish legislation. On the other hand, 14 samples (4,5%) don't carry out more than one requirement.
