Study of the Composition and Quantitative Content of Polyphenolic Substances in Pomegranate Fruit Pulp

The conditions for sample preparation of raw material (pomegranate pulp) for analyzing the separation of polyphenolic substances by HPLC are proposed. Quantitative determination of gallic acid and the total content of polyphenolic substances is carried out. Antiradical activity of fruit pulp is estimated in vitro in the 2,2-diphenyl-1-picrylhydrazyl (DPPH) test and expressed in milligrams of Trolox equivalent (TE) per 100 g of fruits. The value of antiradical activity ranged from 677.8 to 986.5 mg TE/100 g. It is found that there is a correlation between the yield of polyphenolic substances from the samples and the severity of their antiradical properties in vitro.
