The stem and bud portions of Russet Burbank tubers held at 70 F (21.1 C) for 2 weeks had significantly more reducing sugars at holding temperatures of 45 (7.2 C) and 42 F (5.6 C) than tubers immediately placed in 45 and 42 F storage. At a holding temperature of 48 F (8.9 C), no differences were found
