Chinese date powder, and its production method

A jujube powder is prepared from red jujube through extracting juice by pectinase method, adding proper additives, high-pressure homogenizing, and spray drying. It contains water (0-5%), reducing sugar (20-23%), general saccharide (29-31%) and total acid (0.1-0.11%).
