Abstract This chapter is on protein and amino acid nutrition in aquatic animals. It starts with basic introduction of the nutritional biochemistry of protein and amino acids, followed by the fundamental characteristics of protein digestion, absorption, and transport in fish and crustaceans. This chapter emphasizes the latest developments on the quantitative requirements for proteins and amino acids, the regulation of protein and amino acid metabolism, and the governing factors.
