Valutazione della composizione volatile e degli isotiocianati nel cavolo verza

The volatile composition and isothiocyanates of 7 raw Savoy cabbages (Montalto Dora, Savoy King, DA1, DB1, CL1, CL3 and CL5) were studied. The volatile substances were extracted and concentrated from each sample using a microwave-KS112 apolar resin coupled technique. The obtained volatile extracts were quali-quantitatively analysed by GC/MS. All the samples had the same characteristic volatile compounds of the Brassicaceae family and particularly isothiocyanates, sulfures, nitriles, and thionitriles; even if the quantitative aroma profiles were different. The Savoy cabbage lines CL1, CLS, and Montalto Dora population had the higher content in sulfures, isothiocyanates, and carbonilic components respectively. The higher concentration of the total volatile substances were found in CL5 followed by Montalto Dora, Savoy King, CL1, and DB1; while the lower in lines CL3 and DA1. The Savoy cabbage lines CL5 could be considered more suitable for preparation of good dishes, due to its higher total volatile compounds content. Its most interesting use could be in medical field for the prevention and treatment of some human cancers. Infact it contains specific and particular isothyocianates in much higher concentrations compared to the other investigated Savoy cabbages.
