Mineral-enriched yeast biomass: A promising mineral food and feed supplement

Abstract Mineral deficiency is a common problem in developing and underdeveloped countries. Iron deficiency is a leading problem, especially in cereal-based food habits. Mineral supplements such as tablets, fortification, and food supplements have not resulted in any significant changes to the consumer. As such, mineral-enriched yeast has emerged as a potential solution to mineral deficiency Selenium- and copper-enriched yeast are commercially available to fortify food and feed supplements. However, this is still much research to be done regarding other minerals such as iron, phosphate, and magnesium. Metabolic engineering, system biology, and computational biology collectively study the accumulation, transformation, and bioavailability of minerals to the consumer. This research can be used to fortify staple foods to combat mineral deficiency.
