Algunas características nutricionales de la macroalga Ulva sp de la plataforma insular cubana

Macroalga Ulva sp. grown in cuban littoral was analyzed for it vitamin C, calcium, iron, phosphorous and dietary fiber content. In addition, its fatty acid composition was determinated, as well as its protein quality by chemical and biological indices. The alga showed an adecuate nutritional balance due to its high vitamin C and dietary fiber content. Moreover, its protein quality is similar to that of vegatables being hystidine its limitant amino acid. It showed a wide fatty acid composition.
