An experiment was conducted to study the post-harvest physiology (respiration and C2H4 evolution) of newly introduced Spanish jasmine (Jasminum officinale, L. f. grandiflorum, (L.) Kobuski; J. grandiflorum, L.). Also, the optimum stages for flower harvest and essential-oil extraction were studies. By gas chromatographic analysis and organoleptic test, the composition of flower essential oil of Spanish jasmine varied with different stages of development. Since the essential oil production was a dynamically physiological and biochemical process, therefore, the Spanish jasmine flower was recommended to be harvested at the late bud stage and extracted at the stage when the flowers had been fully-bloomed for 2-4 hrs. The relationships among the essential oil production, respiration, and ethylene evolution were also discussed.
