The invention discloses a non-soaking composite enzyme method pre-treatment technology improving brown rice milling performance. Before brown rice milling, under a certain temperature condition, according to a certain liquid adding amount, a food grade cellulase and xylanase composite enzyme solution with a certain ratio, concentration and PH is sprayed to brown rice, so that proper rice milling water content is achieved, and sealing processing is carried out for a while under the condition. Brown rice moisture is adjusted, meanwhile, grain cortex is subjected to micro degradation, so that cortex intensity is lowered, milling force needed for milling is lowered, accordingly, broken rice production during a rice milling process is lowered, and rice milling energy loss is lowered. Compared with a single enzymolysis technology, the composite enzyme pre-treatment technology can improve enzymolysis efficiency and save cost, safety is achieved, toxic and side effects are avoided, the yield of high-quality finished product rice can be well improved, and the energy using rate is improved.
