Ganglioside mg3 composition and its production

PURPOSE: To obtain the subject composition having more excellent protecting effects on infection with influenza virus, etc., than conventional ganglioside separated bovine brain by hydrolyzing milk-derived ganglioside with sialidase. CONSTITUTION: Milk-derived ganglioside GD 3 is treated with sialidase and only one sialic acid at an unreduced end is hydrolyzed so that milk-derived ganglioside GD 3 is deacylated to give the objective composition comprising a mixture of gangliosided CM 3 formula I to formula IV (R is fatty acid residue and the number of carbons IS C 220 , C 230 , C 240 or C 241 ). Specifically, ganglioside GD 3 is suspended or dissolved in 20-200mM buffer preferably solution and treated with 2-20m unit sialidase based on 1mg substrate.
