Ketenproject vervanging vleesproducten door plantaardige eiwitproducten in bedrijfsrestaurants

In dit ketenproject is nagegaan wat de perspectieven zijn van plantaardige eiwitten als vervanger van vlees in bedrijfsrestaurants. Om dit te testen zijn nieuwe product-, keten- en duurzaamheidsconcepten ontwikkeld voor producten op basis van plantaardige eiwitten. De effecten van deze concepten zijn in een pilot getoetst bij de bedrijfsrestaurants en de betrokken ketenpartijen. This chain project examined the prospects for the substitution of meat with vegetablebased proteins in company canteens. In order to test this, new product, chain and sustainability concepts were developed for products based on vegetable-based proteins. The effects of these concepts were tested in a pilot project involving the company canteens and the chain parties concerned.
