Features of Mineralization of Protein Concentrates during the Electrophysical Treatment of Whey

The features of the mineralization of protein concentrates prepared by the electrophysical treatment of whey have been determined. The conditions and possible mechanisms affecting the formation of protein concentrates have been discussed on the basis of experimental data on the changes in the pH value, the amount of isolated protein, and the Ca : P ratio at varying current density. The relationship between the amount of protein in the protein-mineral concentrate and its degree of mineralization with respect to the major ash constituents has been found in order to confirm the mechanism of isolation of whey proteins during electrophysical treatment.
