UTILIZATION OF HUMULONE AND COHUMULONE IN BREWING

A study has been made of the utilization during the brewing process of a acids and the iso-compounds derived from them. Acceptable beers may be brewed by using either preformed isohumulone (isohumulone A) or humulinone (at rather lower rates than are required for humulone). A study of the relative utilization of humulone and cohumulone and of isohumulone A and isocohumulone A shows that losses during the brewing process may be attributed to differences in either solubility or ease of adsorption on the break.
