Dielectric Properties of Maple Sap and Syrup at 2.45 GHz

The dielectric properties of maple syrup at different moisture content levels were determined at 25 °C. An effort was made to observe the behavior of the dielectric properties in relation to the moisture content and the data were also examined to test for an empirical model available in the literature, which was developed using similar products. The variation of the dielectric properties of the maple syrup with moisture content was found to be fairly linear for the range of moisture content studied. The results also agreed fairly well with the suggested model and; hence, the dielectric properties of maple syrup can be expected to behave similarly in the moisture content and temperature range prescribed by the model.
