Nutritional and Anti-nutritional Analyses of Senna occidentalis Linn

The nutritional content of the leaves of Senna occidentalis Linn has been studied. Significant amounts of carbohydrate, protein, lipids, fiber, vitamins (Vitamins A, B1, B2, B3 and C), moisture and ash were found which can supplement the nutritional needs of its consumers. Though some amounts of anti-nutritionals were detected in the plant that may interfere with its nutrient utilization, they were not up to toxic levels and can be removed during processing before consumption
