Identification of type III collagen-derived polymeric components in commercial lime-processed hide gelatins

AbstractIn order to elucidate differences in components between hide gelatins and bone gelatins, we investigated the presence of type III collagen-derived components in lime-processed gelatins. α1(III) chain was detected on sodium dodecyl sulphate-polyacrylamide gel electrophoresis in the presence of urea in the hide gelatins but not in the bone gelatins. Some amounts of type III collagen-derived components detected by Western blotting in the hide gelatins were larger than they form. These components were detected only faintly in the bone gelatins. This is the first report showing the presence of type III collagen-derived components in commercial lime-processed hide gelatins.
