Objective: Poor eating behavior affects both mental and physical health. Cognitive skills, such as self-management skills (SMS), may influence healthy eating behavior. This study examined whether the SMS of eating behavior are mediated by self-efficacy (SE). Methods: The survey was administered to 185 university students. They were asked to complete questionnaires regarding their SMS and healthy eating SE. In addition, in order to investigate the nutritional status as a result of the eating behavior, they were asked to complete a 3-day diet and activity record. A hieratical multiple regression analysis was used to examine whether the SMS of eating behavior were mediated by SE. Results: In regression analyses, SMS was found to have a significant effect on SE and nutritional status (p<.05). In the hieratical multiple regression analysis, the effect of SMS on nutritional status was not significant when SE was added. Conclusion: The SMS of eating behavior was mediated by SE.
