Research in correlation between Shanghai brewing Aspergillus oryzae proteinase and the amount of spores.

This experiment studies the shanghai brewing 3.042 Aspergillus oryase's protease activity and spores curve in the solid-state medium which contains soybean meal,wheat,wheat bran in the proportion of 55∶25∶20 with different moisture content in the proportion of 1∶0.7,1∶0.9,1∶1.1.And the inoculum is 0.3%.The mediums with Aspergillus oryase are subjected to 29,31,33,35,37 ℃ temperature conditions,then will be sampled for analyzing the protease activity and the amount of spore at the 12,18,24,36,42 h these five time point.The results show that:(1)There is a certain similarity between the curve of proteinase(metabolism) and the curve of the amount of spores(morphological changes) in solid-state medium.These two curves show a period of rapid growth correspond with the cell's Logarithmic growth;(2) When in the low temperature(29 ~ 33 ℃),there's a good correlation between the logarithm of spores' amount and protease activity,when in the higher temperature(35 ~ 37 ℃),the logarithm of spores' amount and protease activity donot related to each other.
