A multivariate data set, including chemical and sensorial data of 74 extra virgin olive oils, was analyzed using some chemometric techniques in order to obtain useful information about the correlation between chemical composition and oil taste. The obtained results do not show any relevant correlation, probably due to non-linear effects. Therefore an interesting development of this research might be carried out by applying non-linear techniques
