The present invention relates to a method for producing fucoidan applying an anti-solvent refinement technology for removing a bad taste, an odor and salinity. The method comprises: performing acid hydrolysis in the presence of acids using any one raw material selected from brown algae comprising seaweed, kelp, hijiki and Cladosiphon okamuranus; filtering, neutralizing and concentrating the raw material; inputting an anti-solvent changing solubility with respect to water-soluble polysaccharides contained in a hydrolysate into a supersaturation state and inducing recrystallization of the water-soluble polysaccharides; purifying sludge of fucoidan obtained from the process and eluting inorganic salts, pigments and volatile organic compounds (VOCs); and obtaining high purity fucoidan powder.
