Isopropanol–Water Mixtures for the Production of Fish Protein Concentrate From Atlantic Herring (Clupea harengus)

The efficiency with which isopropanol extracts fat and other materials from minced round herring depends upon the water to solvent ratio in the liquid phase. Optimum dilutions for maximum extractive efficiency are determined. There is a considerable difference in the efficiency with which isopropanol–water mixtures extract fat from herring and cod.
