Procedure for obtaining esteresparciales carbohydrate.

The invention relates to a process allowing the preparation of partial esters of carbohydrate with an esterification rate of the order of 1 to 6, by transesterification catalyzed by alkali in the presence of emulsifiers, according to which: (a) to form a system catalytically, alkali metal carbonates are treated with fatty acid esters of low alkyl of the formula: R 1 CO-oR 2 in which R 1 CO denotes an acyl or branched, saturated or unsaturated ring having from 1 to 5 C atoms and (b) for transesterification, the thus obtained mixture is treated under vigorous stirring with a mixture comprising: (b1) glucoses having 5 to 12 carbon atoms and (b2) partial esters of carbohydrate emulsifiers so to produce an emulsion / dispersion where the particles have an average diameter between 10 and 60 microns. The main advantage of this process is considerably reduced reaction times.
