Ethnic meat products are part of the identity of a local culture and are always popular locally. There are many such products available in India, Pakistan, and neighboring countries. The current available knowledge of various heritage meat products from the Indian subcontinent is discussed in this article. Some important traditional meats of the region covered in this review are tandoori; tikka; Kashmiri wazwan meats such as rogan josh, nate-yakhni, tabak manss, aab gosht, rista and goshtaba; kabab; biryani; haleem; Kolhapuri mutton; Goan vindaloo; traditional meat pickles; momo/dumpling; rapka; pish pash/khicheri; keema; dry salted meats; and kargyong.
