Volatile compounds of sugar cane molasses spirit were isolated by continuous liquid-liquid extraction and analyzed by GC and GC/MS techniques. One hundred and nineteen volatiles, including esters, alcohols, acids, hydrocarbons, carbonyl compounds, acetals, furans, phenols, pyrazines, sulphur compounds and an oxyde, were identified; some had not been previously reported in rum.
