Preparação e estabilidade do extrato antociânico das folhas da Acalipha hispida

The anthocyanins from the leaves of Acalipha hispida were extracted with MeOH/citric acid. The extracts free of chlorophylls were concentrated by reverse osmosis (30°C) and finally under vacuum at 35-37°C. The stability of the concentrated extract in citrate/phosphate buffer was determined in the dark and under light of 2.500 lumen by measuring the loss of absorbance at 530 nm. From these values it was possible to calculate K and t½  for each system. The main anthocyanin was tentatively identified as cyanidin-3-arabinosyl-glucoside.
