A review of storage fruit and vegetable with heat treatment of postharvest

The application of heat treatment in vegetable and fruit storage research and practice field are reviewed, including the effects of heat treatment on vegetable and fruit storage quality such as the firmness, flavor, color and weight loss, and effects of heat treatment on vegetable and fruit storage postharvest physiology and biochemistry such as respiratory intensity, ethylene and related enzyme, protective enzyme and protein synthesis. Heat treatment can control postharvest insect pest, disease and Alleviation of chilling injury of fruit and vegetable. Moreover, we come up with potential prospects of postharvest heat treatment in fruit and vegetable postharvest.
