The invention discloses a dietary fiber buckwheat mushroom biscuit which is characterized by comprising, by mass, 60kg of wheat flour, 20kg of buckwheat, 12kg of malt cereal fiber, 8kg of mushroom powder, 4kg of starch, 35kg of white granulate sugar, 3kg of malt sugar, 10kg of leaf fat, 6kg of refined oil, 4kg of white sesame seed, 4kg of artificial finished cream, 1kg of milk powder, 2kg of egg, 0.6kg of salt, 0.4kg of sodium bicarbonate, 0.23kg of ammonium bicarbonate, 0.025kg of vanillin, 0.003kg of citric acid and 0.002kg of antioxidant. The buckwheat, the dietary fibers and the mushroom which have the medicine and food purposes are added into the formula of a traditional sesame seed biscuit, and therefore the new functions of strengthening the organism immunity of a person, preventing fat and adjusting the blood glucose level are added to the dietary fiber buckwheat mushroom biscuit on the basis of the traditional edible function.
